Beetroot and Redcurrant Relish
Ingredients
- 1 large beetroot, grated
 - 2 shallots finely chopped
 - 1 cup redcurrant jelly
 - 3 tablespoons port
 - ½ cup red wine
 - 1 tablespoon lemon juice
 - juice of 1 orange
 - 2 teaspoons honey
 
Method
Combine all the ingredients in a small pot and cook for 20-30 minutes or until reduced by a third.
